Ingredients :
puff pastry

30 gr sugar
1 egg yolk
Glazed cherry

Filling :

Vanilla custard
500 ml milk
25 gr plain flour
4 egg yolk
100 gr caster sugar
vanilla essence/ powder/ pod
1 tsp grated lemon rind

Beat egg yolk with sugar until pluffy, add flour mix it.
Bring milk just to boil, add vanilla, lemon rind an remove from heat.
Add hot milk into the mixture, whisk.
Cook over low heat and gradually stir until thicken. leave to cool. Ready to use.

Methods :
Roll out the pastry cut into 1 cm wide and around 20 - 25 cm long, roll the pastry along the cone foil, place it in a baking pan brush the pastry cone with egg yolk and sprinkle sugar on top. Bake until golden brown. Cool it in a wire rack.
Fill each cone with custard and garnish with glazed cherry.
